North End restaurant Mare is touting $39 flights of three eco-friendly roes, like farm-raised osetra from China and sea trout caviar from Washington state. Prefer your fish eggs on homemade blini? Somerville-based company the Little Pearl sells caviar from sustainable domestic fisheries and, starting at $500, offers in-home tastings with wine pairings for up to 10 people.
