These plump, round jelly-stuffed doughnuts, consumed frequently during Hanukkah, are deep-fried (like another holiday favorite, potato latkes) in reference to the oil that miraculously burned for eight days after the Jewish Maccabees defeated the Syrian-Greeks in 167 B.C.E.
