Set inside the Boston Harbor Hotel, chef Daniel Bruce’s Meritage is known for its stunning view of the water. But the experience is all about the wine. Dishes are divided by what kind of wine they pair well with: sparkling, light whites; full-bodied whites; fruity reds; spicy, earthy reds; and robust reds. The wood-grilled Atlantic halibut with mild-flavored quinoa, for example, falls under light white, while black truffle–laced roast Vermont pheasant is in the full-bodied-white category. And every dish is available in both small ($15) and large ($29) plates. The wine list is fascinating and tempting, with wines from all the major regions at fair prices. The desserts can be overly fussy, so it’s better to end with a selection of artisanal cheeses and a deeply flavored port.
