Exquisitely done cassoulet and pan-roasted seafood perpetuate the historic vibeif you can ignore the nouvelle complexity of the sauceswhile riffs on Asian cuisine tempt those diners keeping it current. The emphasis on fresh, local ingredients, of course, transcends both eras.
