The deceptively simple plates he creates at Bistro du Midi—pan-roasted cod with golden raisins and chorizo; grilled Mediterranean sea bass with slow-cooked fennel—employ the meticulous French technique he honed under chef Eric Ripert at Le Bernardin in New York.
