One of the best new cheeses out of Vermont is a fresh variation on an old favorite.

Rounding Up: Vermont Butter & Cheese's fresh crottin.

The newest cheese from Vermont Butter & Cheese Company isn’t really new so much as young. Called fresh crottin, this terrific goat cheese is the unaged version of VB&C’s popular Bijou—the same recipe, minus the time in the cave. It’s a savvy way for the company to package an existing product sooner. And it’s also pretty tasty.

Lighter and softer than its elder, the young goat cheese has a wonderfully creamy texture and nutty, floral aroma, which makes it a good choice for people who don’t like the pungent flavor of strong chèvres. Serve it at holiday parties on a cheese board with sliced pear or quince paste, or as a topper for salads and sandwiches.
