Summer in New England means it’s time to gather the lobster tools, dust off the steaming pot, and get cracking. Instead of going with a straight steamed lobster drenched in butter, why not try something new? Maybe try lobster with an Asian twist? Or try it in a salad with some surprising additions. Or how about a lobster casserole? The possibilites are endless. The perfect steamed lobster is still on the menu for the July 4th holiday, but you have all summer to experiment with the rest.

1. Lobster, Avocado and Feta Salad with Lemon Vinaigrette

Creamy avocado and salty feta cheese with luscious lobster will make for an exciting lunch. Making your own vinaigrette is also a great way to keep out the extra calories that hide in bottled dressing. This recipe is a great use for those rare occasions when you have leftover lobster.

2. Lobster and Corn Risotto

Risotto is a creamy rice dish that’s made by slowly incorporating chicken stock into arborio rice. Making delicious risotto is all about patience and technique. Make sure the stock is hot before adding it to the rice and keep slowly stirring to keep from the bottom scorching to ensure that the risotto gets its classic, creamy texture.

3. Grilled Lemon-Tarragon Lobster

Tarragon has a sweet, herby flavor that pairs well with smoky grilled lobster. You’ll need a good, sharp knife for cutting the lobster otherwise the meat will tear and the shell is crumble and will be awkward to grill.

4. Seafood Paella

Paella is a traditional Spanish rice dish made with a couple types of seafood like lobster and mussels. The ingredients list on this recipe is quite long, but the only thing not easily accessible is the saffron threads. Saffron is a key ingredient and should be used sparingly because it can be overpowering when you use too much.

5. Healthy Lobster Mac & Cheese

We can’t talk lobster without talking mac and cheese. This recipe uses whole wheat pasta, reduced fat milk and low fat cheese to cut the calories but adds gruyere cheese to keep the richness. Making fresh bread crumbs doesn’t take a lot of time to prepare and will make a difference that will surprise you. Definitely take the time to create your own (and maybe finish off a loaf of bread threatening to go bad in your pantry).

6. Smoky Corn and Lobster Stew

This recipe uses grilled vegetables to give these classic flavors a tasty summertime kick. You also continue to use the shells after the meat has been removed and this will make sure that the maximum flavor is extracted from every part of the lobster.

7. Skinny Lobster Roll

Easiest way to make a healthy lobster roll? Concentrate on the lobster and leave the extra stuff out. This recipe cuts the mayo with greek yogurt and adds spinach (best way to boost the healthy factor in most recipes) to a whole wheat roll.
