Chef Todd Winer updates traditional Passover cuisine, turning out matzo-meal popovers stuffed with chicken salad, and veal brisket with potato pancakes. It doesn’t count as a real Seder, but it might make up for Aunt Edna’s dry kugel and leaden macaroons.
