50 Best Restaurants: A Birthday Makeover for Bondir

It’s hard to believe it’s been a whole year since chef Jason Bond debuted his new restaurant in Cambridge’s Area Four neighborhood. To celebrate, the Beacon Hill Bistro alum and his team will be hosting a reservations-only prix-fixe dinner tonight with four seating times; the evening will feature a champagne toast and four-course menu for $65, with the option for of adding wine or beer pairings for an additional $30. While the night has been fully reserved for some time, it’s always worth calling to see if there have been any cancellations; it promises to be a delicious evening.

Understandably, the Bondir team will be taking a few days off after the fete, celebrating Thanksgiving with a three-day hiatus. And when they return on the 25th? “We release Bondir v. 2.0,” Bond says.

Diners can expect subtle changes, including tweaks to the decor. “[We’re] working on a couple of interior graffiti murals with an artist,” Bond explains. “That was supposed to happen a year ago, but its hard to find a professional and dependable graffiti artist,” he half-jokes.

The menu and service are also seeing some upgrades. “Our new manager, Erin Reilley, just joined us from Hamersley’s, and she is doing great,” Bond says. As for the food, “I’ve got a cook training with an Austrian mangalitsa butcher, so [there will be] more pork this year, as well as Herdwick mutton, pasture-raised rabbit, and other fun critters.”

Next week, Bond will also be cooking a dinner for culinary luminary Ferran Adria when the star chef comes to town for Harvard’s much-ballyhooed Science and Cooking series (which we explored in depth this month.).

Other than that, Bond says, “The same plan is in effect for [our] second year: Keep improving ourselves and do anything we can to make our guests feel at home and well cared for.”
