Justin Urso Is the New Chef at Deuxave

The L'Espalier alum takes over in Back Bay, while Chris Coombs and team open a second Boston Chops downtown.

While the Boston Urban Hospitality group grows with a new location of Boston Chops, its flagship restaurant gets new leadership. Deuxave just announced Justin Urso is the new chef de cuisine, while Stef Bui leaves that role to open the Downtown Crossing steakhouse later this year.

Bui took over as Deuxave’s chef de cuisine last spring, as Adrienne Wright became restaurant group’s corporate chef, and owners Chris Coombs and Brian Piccini announced a desire to open more restaurants.

Urso is well-qualified to helm the award-winning modern French, New England seasonal menu at Deuxave.

“Justin’s passion and commitment to quality products and innovative cooking techniques matched with classic training are the perfect fit for our team,” Boston Urban Hospitality chef/owner Coombs said in a press release.

He comes directly from Cape Cod Chatham Bars Inn’s Stars restaurant, and he started his career under farm-to-table leader Frank McClelland at Sel de la Terre and L’Espalier. He also spent time in New York City, at Maze by Gordon Ramsay, Mario Batali and Joe Basitianich’s Michelin-starred Del Posto, and as chef de cuisine of the Michelin-starred Picholine Restaurant. At Deuxave, Urso joins pastry chef Shaun Velez.

Boston Urban Hospitality is also behind dBar. Their South End steak bistro, Boston Chops, is also a Best of Boston winner. The second location will open on Temple Place early this fall.
