Tim Wiechmann to Bring a Beer Garden, Sausage Menu to Somerville
The T.W. Food chef will open Bronwyn, a casual "new American" concept in Union Square.
As further evidence that the the food scene in Somerville is majorly heating up, there’s yet another newcomer to the area: Bronwyn, a “new American” (read: German, Austrian, and Northern Italian-inspired) bistro from Tim Wiechmann, who runs T.W. Food in Huron Village with wife Bronwyn (hence the name).
Anyone who has tasted Wiechmann’s inspired locavore cuisine knows that this is a big deal; if you haven’t, however, there’s plenty to get you pumped about the new concept, which will open at 255 Washington St. (formerly Ronnarong) in Union Square sometime this fall.
“This will be much more casual and lighthearted [than T.W. Food],” says Wiechmann, who is German-American. “It’s a little bit bigger than T.W., and it’s going to have a bunch of my German influences.” Lucky for us, this means an outdoor beer garden, a sausage tasting menu (with housemade thuringer, cotechino, blutwurst, and honey-lavender boudin blanc), and specialty Schnapps cocktails.
In terms of more composed dishes, expect fare like local beef sauerbraten with gingerbread sauce, and a bier-braised pork shank that’s a play on traditional German schweinshaxe. The Northern-Italian influence shows up as well in dishes like an heirloom grain risotto inspired by the Alto Adige region of Italy. It all sounds like a welcome addition to the blossoming neighborhood, though we sold as soon as we heard the three magic words “sausage tasting menu.”
