Behold the glory of Union Square Donuts. The new Somerville shop is a collaboration between Heather Schmidtâ€”who has crafted pastries at Clear Flour Bread, Radius, and Rialtoâ€”and Josh Danoff, of the kombucha-and-popsicle business Culinary Cruisers.
â€śI am excited about doing doughnuts because theyâ€™re nostalgic and remind you of home,â€ť Schmidt says, â€śbut you can also create these really interesting, beautiful flavors.â€ť The pastry chef has dreamt up inspired combinations like maple-bacon, honey-almond, and hibiscus-cherry for her glazed confections. And for those who prefer the leavened varietyâ€™s denser cousins? â€śCake doughnuts will be in our future,â€ť Schmidt says, â€śand I know they are going to be good.â€ť
