Ibiza

One of many collaborations between restaurateur Ignacio Blanco and chef Luis Bollo, Ibiza re-creates the cuisine of Barcelona, Mallorca, and San Sebastien. Here, creative combinations such as tosta de lomo de cerdo, Spanish paprika marinated loin of pork with tetilla cheese, garbanzo bean purée and romesco sauce, are everyday fare.
