The beauty of owner Wyeth Lynch’s new counter-service barbecue joint in Allston is that it gives diners sauce control. Instead of the heavily slathered meat that some New England spots just can’t resist, SoulFire offers naked dry-rubbed pork and beef alongside five homemade sauces including a spicy North Carolina vinegar, a peppery South Carolina mustard, and a molasses-rich traditional blend. Pit master Josh Cook smokes pork, brisket, chicken, and ribs for hours over hickory, oak, and maple. (The kitchen has a 1,000-pound-capacity smoker.) There’s also fried catfish, chicken wings, and a host of sides—the collard greens and coleslaw are both top-notch. But our favorite is the mac and cheese bites: breaded, deep-fried pasta balls that are crispy on the outside and creamy on the inside. Dipped in a sweet sauce, they were, along with the barbecue, just the way we like it.
