Formerly of the Federalist and Spire, Hill uses his charming, wood-paneled dining room to showcase American ingredients: Chatham monkfish, Kentucky bourbon, California caviar, and our favorite, Hawaiian chocolate, which appears as a decadent chocolate soufflé served with peanut butter ice cream.
