Summer sun is Chatham’s usual lure. But chef Toby Hill’s elegant new restaurant, the Eldredge Room, makes this charming town an equally good culinary destination. Formerly of the Federalist and Spire, Hill uses his charming, wood-paneled dining room to showcase American ingredients: Chatham monkfish, Kentucky bourbon, California caviar, and our favorite, Hawaiian chocolate, which appears as a decadent chocolate soufflé served with peanut butter ice cream.
