Owner Ellen Bartlett is seeing a new trend in wedding cakes: chocolate. "Generally, people who love chocolate are passionate people," she says. "It might have something to do with endorphins, but whatever it is, chocolate adds an element of excitement." A popular cake is the Deep Chocolate Framboise Cake, which is made of rich devil's food cake layers filled with raspberry-studded dark-chocolate mousse, topped with framboise-liqueur-flavored buttercream.
