A Healthy Thanksgiving Leftovers Recipe

Make the most of your leftover turkey, sweet potatoes, and cranberry sauce in these lettuce wrap tacos.

A typical Thanksgiving leftovers recipe involves piling everything in your fridge between two slices of bread and calling it a day. But if you’re trying to ease yourself out of the Thanksgiving food coma, this turkey taco recipe is a far better option. These tacos use up leftover turkey, sweet potatoes, and cranberry sauce, but opting for lettuce leaves in place of tortillas keeps it light and low-carb.

Ingredients
Serves 2

1 cup turkey
1 cup cranberry sauce
1/2 red onion
1/2 cup cilantro
1 cup sweet potatoes
1 can black beans
1/4 tsp onion powder
1/4 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
Head of iceberg lettuce

Directions

Rinse the black beans and add them to a pot, along with the onion powder, chili powder, cumin, paprika, and 1/4 cup water. Let the beans and spices simmer on low heat until the water is absorbed. Turn off the heat, cover, and set aside.

Chop the red onion and mince the cilantro. Add both to the cranberry sauce. Dice the leftover sweet potatoes and chop the turkey into small pieces.

To assemble the tacos, take four large leaves from the head of lettuce. Ladle a scoop of the black beans onto each leaf, then add cranberry salsa, sweet potatoes, and turkey.
