Three Ways to Make Sweet Potato Toast

Avocado toast took the world by storm last year, but it’s time for it to make room for sweet potato toast.

Contrary to its name, though, this toast doesn’t actually involve bread—the base is sweet potato. You may have never thought to stick a potato in a toaster, but, hey, someone did, and it’s catching on.

Below are three ways to customize your sweet potato toast, although there are infinite possibilities.

The Toast

Follow these steps for every variety you make: Buy a large sweet potato and trim the ends to ensure it fits in your toaster. Cut the sweet potato into thin slices, about 1/4 inch thick each. Place each slice in the toaster, and turn the heat to its highest setting. Toasting the potato twice should get it crispy and cooked through, but cooking times may vary depending on your toaster.

Version 1: Cottage Cheese and Balsamic Cherry Sweet Potato Toast

What you’ll need: Sweet potato toast, 1/4 cup cottage cheese, 1 tablespoon balsamic vinegar, 4-5 chopped cherries

Cottage cheese is a protein-packed snack relatively low in calories, making it the perfect spread. Cherries are in season right now and add some sweetness to the salty cottage cheese.

To make, spread the cottage cheese on top of the sweet potato toast. Top with the chopped cherries and drizzle the tablespoon of balsamic vinegar on top.

Version 2: Honey Mustard Tuna Salad Sweet Potato Toast

What you’ll need: Sweet potato toast, 1 can tuna, 1/4 cup chopped green pepper, 1/4 cup chopped red onion, 2 tablespoons honey mustard

This recipe is a much heartier variation on this trend. Tuna is packed with protein, and, when combined with the complex carbohydrates of the sweet potato, it will keep you energized all day long.

To make, drain the can of tuna. In a bowl, combine the chopped peppers, onions, honey mustard, and tuna. Stir well.

Scoop the tuna salad onto a piece of sweet potato toast. Sprinkle with a dash of pepper.

Version 3: Avocado and Egg Sweet Potato Toast

What you’ll need: Sweet potato toast, 1 avocado, 1 egg

Why mess with a classic?

To make, slice the avocado in half and remove the pit. Scoop out the insides and spread on a piece of sweet potato toast, using a fork. Cook an egg in your desired style.

Add the egg to the toast, and top with a sprinkle of chili flakes or a dash of Sriracha, if desired.
