Recipe: Healthy Pumpkin Pie Smoothie

Forget that other pumpkin spice drink. This healthy smoothie is the perfect fall breakfast.

No judgment here if you’re a pumpkin spice fanatic. But instead of drinking a PSL every day, try this pumpkin pie smoothie. It’s tasty, creamy, and—surprise, surprise—actually good for you. Pumpkin purée adds fiber and vitamin A, banana lends the perfect amount of creaminess, and almond milk polishes things off with a great nutty flavor. What’s not to love?

A couple tips: For more protein, use 1/2 cup milk and 1/2 cup Greek yogurt, or add a tablespoon of almond butter. And if you don’t have frozen bananas, you can make do with a handful of ice cubes.

Ingredients
Serves 1-2

1 cup pumpkin purée
1 large banana, frozen
1 cup almond milk, plain and unsweetened
1 Tbsp honey or maple syrup
2 tsp pumpkin pie spice
1 tsp vanilla extract

Optional: Crushed graham crackers, ground flaxseed, pumpkin seeds, or crystallized sugar for topping

Directions

Add the frozen banana, pumpkin, and almond milk to a blender, then add the honey, pumpkin pie spice, and vanilla extract. Blend until smooth, adding ice if you want it to be colder. 

Pour into a glass and add any toppings you’ve decided to use. If you’d like, you can keep half in the freezer for tomorrow, or give half to a pumpkin-loving friend.
