Attention all chocoholics: these grain-free brownies are just for you. Fudgy and with a hint of peppermint, they’re the perfect treat to make this holiday season.

These grain-free brownies are made with coconut flour, which contains high levels of fiber, magnesium, and some protein. You can find coconut flour at your local Whole Foods as well as most conventional supermarkets. I bought mine at Market Basket. Even though it’s a grain-free flour, it’s relatively inexpensive (about $3/bag) compared to almond flour and other grain-free options, ringing in at about $5/bag.

If you’re vegan, you can substitute the eggs for flax eggs. And if you prefer to keep your grain-free brownies on the low-sugar side, feel free to leave out the melted chocolate on top. Instead, just top the fresh baked brownies with the crushed candy canes.

Brownie Ingredients

  • 3/4 cup unsweetened apple sauce
  • 1/4 cup maple syrup or honey
  • 3 large eggs
  • 1 tsp peppermint extract
  • 1/2 tsp salt
  • 1/4 cup cocoa powder
  • 1 tbs dark cocoa powder
  • 1/2 cup coconut flour

Topping Ingredients (Optional)

  • 1 tbs coconut oil
  • 1 cup dark chocolate chips
  • Crushed candy canes

Directions

Preheat the oven to 350 degrees.

In a large mixing bowl, mix together all of the brownie ingredients. Stir until combined. Pour the batter into a greased 8×8 pan. Bake for 30-35 minutes.

While the brownies are baking, melt the chocolate and coconut oil on low heat in a double boiler. If you don’t have a double boiler, you can melt the chocolate and coconut oil together in the microwave, stopping every two minutes to stir. Continuously check the mixture to be sure it doesn’t burn.

When the brownies have cooled slightly, pour the chocolate on top. Sprinkle the brownies with the crushed candy canes. If you prefer, you can omit the dark chocolate and sprinkle the top of the freshly baked brownies with the candy canes.

Serve the grain-free brownies warm and store in a sealed container for up to five days. Enjoy!
