The Regal Beagle Introduces a New Summer Menu

Get ready for clam cake gougères, whole stuffed lobsters, and a coconut sabayon.

Stacy Cogswell, formerly of UpStairs on the Square and Jean Georges Vongerichten’s Market, has made quite the splash since taking over the kitchen at Coolidge Corner’s The Regal Beagle last summer. The tiny gastropub is a neighborhood favorite in Brookline, but in little over a year, Cogswell has given The Beagle’s dinner menu and bar bites some much needed upgrades. Starting this week, the chef introduced her latest menu with additions like tuna crudo with a black garlic emulsion and a watermelon salad with feta and hot chili oil.

“I’m trying to incorporate some New England flavors with old school techniques,” Cogswell says. “There are so many things I’m excited about with this new menu, like the clam cake gougères. I grew up on the Cape eating those, thick, heavy, stick-to-your-ribs kind. But these are really light and airy, and served with a delicious Old Bay and Tabasco aioli.”

Other new dishes include a sweet coconut sabayon with grilled pineapple and Cogswell’s gingered lobster. “This is a full lobster, claws shucked, and the tail stuffed with panko and ginger scallion butter,” Cogswell says. “That’s served over a sweet and sour eggplant with a sauce made from soy caramel, lime, basil, and fish sauce. There’s also a little house-made harissa, that is really freaking spicy”

Popular favorites returning from last year’s menu include ricotta and parmesan stuffed squash blossoms and a Heritage Farms pork chop with a watermelon barbecue sauce and collard greens.

The Regal Beagle will transition into a new fall menu by the second week of September, so take advantage while you can.
