Boston Nightlife Ventures, the group behind Forum and Wink & Nod, shuttered The Tap back in February to give their seven-year-old pub, located just outside of Faneuil Hall, a much needed makeover. When it opens next week, no longer will you see 25 cent wings and cheap pitchers of booze, as the newly minted The Tap Trailhouse embraces its historic neighborhood, offering Colonial-era “vittles” such as fried smelts, cauldron clam chowder, and craft beer poured from antique musket handles.
Working alongside City Landing chef Bill Brodsky, who consulted on the project, the Boston Nightlife Ventures group has created modern takes on classic New England fare. What they’re dubbing a “farmer’s kitchen menu”—which is adorned in vintage fonts and woodblock artwork—includes appetizers like oyster tacos and country rabbit sausage; a “Supper” of lobster pie (with sherry lobster cream) and chicken and barley stew; and sides such as farmhouse succotash and Boston Baked Beans.
There are also some anachronistic alternatives to The Tap’s Freedom Trail-inspired cuisine, like a pumpkin whoopie pie with Moxie-ginger syrup, garlic parmesan fries, a brown sugar-poached hotdog, and a veggie grinder topped with eggplant and tomato. The beverage program will emphasize regional craft brews poured from 24 taps as well as a list of beer-based cocktails.
