Celebrate All Things Swine at Bronwyn
Nose-to-tail enthusiasts, rejoice! Bronwyn chef Tim Wiechmann is celebrating all things Pats and pig skin with a celebration of sow. Starting on January 20, experience a six-day feast that will highlight different cuts and parts through a progression of porky specials. Blow off those well-intentioned New Year’s resolutions with dishes like trotters cassoeula, Eastern European barbecue ribs, beer-braised shank, juniper-brined pork loin, and a smoked and confit head served with challah bread.
