SRV Hosting Prototype Pop-Ups

In preparation for their new restaurant, SRV, an Italian concept centered around Venetian cicchetti, chefs Kevin O’Donnell and Michael Lombardi (both of The Salty Pig) will host a series of prototype pop-up dinners at Fairsted Kitchen, Toro, and Brick & Mortar. Kicking off on August 19 at Fairsted Kitchen, O’Donnell and Lombardi will take over Stephanie Cmar’s kitchen in Brookline to test out recipes like their mozzarella in carozza with bonito and squash blossoms; baccala with black bread; and Carta di Musica, a crispy flatbread made with lardo and rosemary.

Set to open this fall at 569 Columbus Avenue in the South End, SRV is the culmination of chefs’ lifelong passion for authentic Italian cuisine, both of whom trained overseas. The name SRV pays homage to the Serenissima Repubblica di Venezia (Serene Republic of Venice). See below for the full schedule of prototype pop-ups.
