Recipe: Strawberry Parfait

For our spring entertaining guide, Chef Ben Elliott shares nine recipes for a farm-fresh family-style meal. Here’s how to make his yummy strawberry parfait.

Strawberry Parfait

Serves 6

  • 1 16 oz. container fresh strawberries, stemmed and chopped
  • ¼ c. plus 1/8 c. sugar
  • 1 lemon, zested and juiced
  • 1 c. heavy cream
  • ½ tsp. vanilla extract
  • 6 baked sweet sour-cream biscuits, crumbled
  • Pinch salt

Prepare biscuits. Mix chopped strawberries with ¼ cup sugar, chopped lemon zest, lemon juice, and a pinch of salt.

In a separate bowl, combine the cream with 1/8 cup sugar, vanilla, and another pinch of salt. Whip to stiff peaks. To build, layer strawberry mixture in a glass or cup with the whipped cream and the crumbled biscuits. Garnish with mint sprigs.
