Blackbird Doughnuts Spreads Its Wings to Brighton Next

The growing Gallows Group bakeshop brand also has a location coming soon to Harvard Square.

The Allston-Brighton area is getting another buzzy business: Blackbird Doughnuts plans to open its fourth shop, and grow its production space, at 100 Holton St. in Brighton.

Eater Boston reports the South End-born company will expand with a second production kitchen inside the 5,600-square foot space, to accomodate its growing team: In addition to the original shop, Blackbird has an outpost in the Fenway, and one headed for the Harvard University Smith Center later this summer. The doughnuts are also regularly available at SoWa, and on the brunch menus at sister spots the Gallows and Banyan Bar + Refuge.

Blackbird, beloved by Adele, makes a variety of yeasted and plain doughnuts. Must-orders include the speckled vanilla bean signature; buttery brioche filled with classic Boston cream; and the incomparable savory, whipped cream-filled everything flavor. It also does cake doughnuts sprinkled with almond-toffee crunchies, or glazed with bright fruit icing; twirls soft serve ice cream cones and doughnut sandwiches; and fills special orders of everything from minis to birthday cakes.

The Brighton area between Soldiers Field Road and the Boston Landing MBTA station—where New Balance, the Bruins, and the Celtics all just moved—is in the midst of a development boom. A rum bar and Latin American restaurant called Casa Caña just opened nearby this week at the new boutique hotel, Studio Allston. On Western Ave., a Harvard University-sparked initiative called Zone 3 has brought pop-up holiday markets, beer gardens, and art to the area, along with Allston’s first luxury condos, a Trader Joe’s, and restaurants like Our Fathers Delicatessen.

No word just yet on a timeline for the Brighton Blackbird Doughnuts and kitchen. When it lands, it will join in the neighborhood a new Pavement Coffeehouse and production facility, and also Flour Bakery & Café’s commissary kitchen.
