Bistro du Midi Chef Josue Louis Gets a Promotion

He's spent the past six years at the Back Bay spot, most recently as Robert Sisca's sous chef.

Bistro du Midi chef Robert Sisca left the restaurant last month after seven years, but his legacy is likely to remain: Today, the restaurant announced its new executive chef, Josue Louis. He’s a Boston native who’s worked under Sisca for several years, most recently as sous chef.

“We are thrilled to promote Josue Louis,” says Marlon Abela, chairman of his namesake restaurant corporation, which owns Bistro du Midi. “Josue has been an integral part of the team and his passion for simple ingredients and the bold flavors of Provence will delight our guests for years to come.”

In his new role, Louis will oversee all culinary operations at the Boylston Street bistro. Before starting there six years ago, Louis worked at the Fairmont Copley Plaza. He is a graduate of the Culinary Institute of America in Hyde Park, New York, as well as the Madison Park Vocational High School in Roxbury Crossing.

“It has been an honor to work for MARC and in the kitchen at one of Boston’s most celebrated venues and I am eager to collaborate with our talented team and take the Provencal cuisine to new heights,” Josue says in a press release. His menu debuts in June.

Sisca left Boston for Providence, where he is now the executive chef of three concepts, the French-inspired Garde, sports gastropub GPub, and the Rooftop at the ProvidenceG. The Johnson & Wales alum is a past Food & Wine People’s Best New Chef recipient, and he was in the kitchen at the famed Le Bernadin when it earned four New York Times stars, and three Michelin stars.
