Nibble Snack Shop Debuts a Pop-Up in Kendall Square

The new retail store will offer a variety of quick, healthy-ish bites through March.

Need a quick bite in Cambridge? There’s a new place to get your fix: Nibble landed in Kendall Square today to bring a number of healthy-leaning snack brands to the neighborhood.

The retail pop-up will run through March, says founder Joyce Lee, with a curated selection of treats, like oat-based cereal cups, tea squares, cinnamon quinoa bites, and more. While working in the food marketing industry, Lee felt the urban areas she visited on her travels lacked any quality snack options, she says. With her first Boston venture, she’s looking to change that.

“We look around the country to find innovative snacks, and brands that [offer] a new take on snacking, and bring them all into one place,” she says. “So, a lot of our brands are made by small food entrepreneurs.”

The store is sourcing its products from local and national brands, including cold brew from the locals at Commonwealth Coffee Co., organic snack bars from Simple Squares in Chicago, and grain-free granola from Kitchun in Texas. If you haven’t heard of these brands, don’t worry: Lee likes it that way.

“We want [people] to explore,” she says. “It’s essentially brands that have done a really great job of changing the snacking category.”

If you are tentative about buying blind, Nibble has a tasting station highlighting new brands each day, whether that’s a chocolate-dipped almond, or a breakfast bar made from spent grain.

Nibble is housed in the same MIT-owned space EHChocolatier occupied in February, but Lee says she expects to be the last pop-up tenant there.

“It gives me a chance to test out my concept,” Lee says. “And beyond here, if things go well, maybe we do another pop-up, or eventually find a permanent place.”

Nibble will be open Monday-Friday, 7 a.m.-6 p.m., and on Saturdays from 11 a.m.-4 p.m.
